Syrah
Produce of vines grown on a stony plot at 450 metres altitude, on the Tournefort plateau.
Philosophy: Sustainable viticulture based on observation, preventive care and close attention to natural balance.
After harvesting, the grapes are transported to the cellar and pressed directly, with slow and gentle extraction of the juice. A first fermentation takes place in the vat, followed by a second fermentation in the bottle, known as the "prise de mousse", when the effervescence is formed. This traditional-method wine is ready for drinking after 9 months' bottle ageing on racks.
Robe : pale rose.
Aromas of little red fruits and a hint of quince on the nose.
A straight attack on the palate, with a fine and steady foam.
Serve between 8° and 10°C.
Perfect on apérirtif and deserts.
Will match wonderfully with chocolate feuillantine and a strawberry topping.
