Cellar & WinemakingThe cellar, lying adjacent to the tasting room (previously a sheepfold), was constructed in 1974. This large, partially sunken building is situated within the vineyard, and in close proximity to the Château. With a capacity of 6 000hl, it is air conditioned and equipped with efficient winemaking material fitted with a chilling system, indispensable for white and rosé winemaking. Aging in French oak, since 1990, represents more than 300 barrels. A majority of lighter toast barrels from Alliers and Nevers is associated with a small percentage of heavier toasted oak from Vosges. A moderate degree of toasting is preferred, enhancing the aromas of the grape varieties while optimising the intensity of our Grand Seuil wines.
